Verifying everything is correctly going in/out ESS??

I am working through switching from an on-premises Barracuda anti-spam appliance to the cloud ESS service.


What is the best way to test and verify that all email is correctly going in/out of the ESS service and not using the on-premises appliance?? -- particularly 'temporarily' in case something to do with ESS does not work??
